Leftovers for Lunch

Now that I’m finally settled into my new digs and have my kitchen unpacked, I’m excited to post some tasty recipes to inspire my readers to “eat smarter.”
Sunday night’s dinner was salmon, beets, and sauteed Swiss chard flavored with lemon and dill. Thinking ahead to my busy week, I cooked up a few extra salmon fillets for quick and easy use in a salad, omelet, or sandwich.
When my good friend Rachel popped by with an extra container of strawberries, I had a great idea for lunch. A wrap with the leftover salmon, sliced strawberries, a handful of cilantro, and avocado. I used my favorite high fiber wrapper, Damascus Bakery’s “Flax Roll-Up” with 9 grams of fiber and only 110 calories per wrap, available at many grocers.

Recipe:
1 whole grain wrap
2 oz salmon (could substitute chicken or tuna)
handful of cilantro, chopped
1-2 thinly sliced strawberries
1/8 Haas avocado, spread onto wrap
Sandwich contains: approximately 290 calories, 11g fiber (nearly 50% of your daily 25g fiber goal), 10g fat (including heart healthy omega-3’s from the fish and monounsaturated fats from the avocado), and plenty of protein, vitamins, and minerals.
Add a piece of fruit such as a mineola or clementine and a glass of water or green tea and you have a balanced, uber-healthy lunch.
